Talking of tomatoes, or any fruits and veggies with antioxidants – do the antioxidants go away if you cook your food or does it still retain all the nutrition ?
Hey Pankaj! Thanks for your question. While the question is straightforward, the answer is not. Some fruits and vegetables retain their antioxidants even when cooked, but most don’t. There is a lot of conflicting research out there, but the best practice, in my opinion, is not to cook your produce for too long. For example, when pan frying broccoli, I only cook it for about 1-2 minutes and take them out of the pan while they are still vibrant green and crunchy.
