Welcome to Baking with Dad
Hey kids, welcome to another edition of Cooking with Dad. Technically, it’s Baking with Dad because today I’m going to show you how to bake pumpkin bread. I’ve shown you how to make banana bread before, but not pumpkin bread.
And everybody loves something pumpkin, right? If you go to Trader Joe’s, there are so many different things with pumpkin flavoring. So I thought I’d walk you through this recipe.
Dad Joke
Before we get started, here’s your dad joke:
Why was the jack-o’-lantern considered a coward?
Because he didn’t have any guts!
Ingredients
Preheat your oven to 350°F.
- 1/2 cup unsalted butter, melted and brought back to room temperature
- 1 tsp cinnamon
- 1 tsp cloves
- 1 cup granulated sugar (I’m using organic, so it looks a little brown)
- 1 3/4 cups flour
- 1/2 tsp salt
- 1 tsp baking soda
- 1 cup walnuts, lightly chopped into chunks
- 2 eggs, lightly scrambled
- 1 cup pumpkin purée
- 1/4 cup water
Mix the Wet Ingredients
Add the sugar to the pumpkin purée. Then add the cinnamon and cloves. Gently mix everything together.
Set that bowl aside and grab a larger one.
Mix the Dry Ingredients
Add the flour to the bowl. Then add the baking soda—spread it around well so you don’t get clumps. Add the salt and stir all the dry ingredients together.
Combine Wet Ingredients
Add the eggs to the pumpkin mixture and gently blend. Then add the room-temperature melted butter and blend again.
Combine Wet and Dry
Now combine the dry flour mixture with the pumpkin mixture. Gently mix until everything is incorporated.
Add 1/4 cup of water to help it come together more smoothly and mix again.
Add Walnuts
Add the walnuts and gently fold them in. Notice how the larger chunks add texture. We’re almost done!
Prepare the Pan
Spray a loaf pan with cooking spray. Add the batter to the pan. A rubber spatula works great for getting everything in.
As a garnish, I like to add unsalted cooked pumpkin seeds on top.
Bake
Bake in your preheated oven for 55–60 minutes.

Make sure to let it cool before slicing, or it will fall apart.
