Urbanization is eating up open spaces once used for farming. An estimated 175 acres of farmland every hour is lost due to over-development. In areas such as southern California, sustained drought conditions are forcing farmers to be more sustainable in how they produce food.
Worse, the modern city dweller has food trucked in from an average of 1,500 miles from where they live. These “food miles” contribute to the use of fossil fuels, increase pollution, and bizarrely reduce food quality since the food is harvested before ripening and transportation resulting in inferior flavor.
