How to Make Salted Cookie Granola

PREHEAT AND MIX
Preheat the oven to 325°F and line a baking sheet with parchment.
In a large bowl, mix the oats, oat flour, coconut sugar, baking soda, and cinnamon. Stir in the melted coconut oil and maple syrup until well combined and clumpy.

FOLD
Let cool slightly, then fold in the chocolate chips.

PRESS
Press the mixture firmly onto the baking sheet.

SPRINKLE AND BAKE
Sprinkle with Colima Sea Salt and then bake for 20 minutes, until golden around the edges—don’t stir!

BREAK AND SERVE
Cool completely, then break into clusters and enjoy!

Ingredients
- 1 ½ cups rolled oats use certified gluten-free if necessary
- ½ cup oat flour use certified gluten-free if necessary
- ¼ cup coconut sugar
- ¼ tsp baking soda
- ¼ tsp ground cinnamon
- ¼ cup melted coconut oil
- ¼ cup maple syrup
- ⅓ cup mini chocolate chips
- 1 tsp Ava Jane’s Kitchen Colima Sea Salt
Instructions
- Preheat the oven to 325°F and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the oats, oat flour, coconut sugar, baking soda, and cinnamon. Mix well.
- Stir in the melted coconut oil and maple syrup until everything is evenly moistened and clumpy.
- Let the mixture cool for a few minutes, then gently fold in the chocolate chips.
- Spread the mixture evenly onto the prepared baking sheet and firmly press it down with a spatula or your hands to encourage large clusters.
- Sprinkle the coarse unrefined sea salt evenly over the top.
- Bake for 20 minutes or until golden brown around the edges, without stirring.
- Let the granola cool completely on the baking sheet before breaking into clusters and storing in an airtight container.
