What is Shatta?
If you’ve never heard of shatta, you’re in for a treat. It’s a Middle Eastern hot sauce that comes in two varieties: green and red. It’s made with green or red chiles, and mixed with salt, extra virgin olive oil, and various herbs and spices. It’s a highly popular spicy condiment in Jordan, Lebanon, Palestine, and Syria.

Ingredient Notes
Chickpeas: Canned chickpeas act as the base of this recipe and give it a smooth, creamy texture. Alternatively, you can use dried chickpeas that you’ve boiled until tender.
Shatta: Gives this sauce a spicy kick. You can use store-bought (I love using the sauce from Wildfare) or make your own using recipes from my books Hot Sauce Cookbook for Beginners and Fermented Hot Sauce Cookbook.
Extra Virgin Olive Oil: Makes the hummus rich and creamy. If you do not have olive oil, avocado oil works well, or if you are on an oil-free diet, you can use water instead.
Aquafaba: The liquid reserved from a can of chickpeas. It helps thicken the hummus, and gives it a smoother texture.
Lemon juice: Gives the shatta hummus a zesty kick. You can use either fresh or bottled, though I prefer using freshly squeezed lemon juice.
Garlic: Adds a robust and savory flavor to this recipe. If you are out of fresh garlic, a pinch of garlic powder will do the trick.
Salt: Enhances the savory flavors of this hummus recipe.
Za’atar: A Middle Eastern spice blend you can use as garnish if preferred.
How to Make Shatta Hummus



- Add the chickpeas, aquafaba, shatta, extra virgin olive oil, lemon juice, garlic cloves, and salt to a high-speed blender or food processor.
- Blend all ingredients until they’ve turned smooth and creamy.
- Place in a bowl or jar and sprinkle with Za’atar if desired.
- Serve and enjoy!

- As a dipping sauce for pita bread, pita chips, pretzels, chickpea crackers, tortilla chips, oven-baked french fries, or smoky purple sweet potato fries.
- Paired with fresh vegetables like cucumbers, zucchini, carrots, broccoli, bell peppers, and tomatoes.
- Served with air fryer falafel.
- Spread over quinoa flatbread or red lentil flatbread.
- Use it as a spread for sandwiches or to add a bit of a spicy kick to salads!
- It also makes a great pasta sauce! Just thin it out with a little pasta cooking water and you’re good to go.
