This Thanksgiving leftover casserole takes all your favorite leftovers and combines them into a big meal, making it a great way to use up all those leftovers. Tip: Use light mayonnaise and reduced-fat cheddar cheese to make this meal healthier.

Prep your Thanksgiving leftovers

Preheat your oven to 375 degrees F and prepare a casserole dish with non-stick spray.

Spread dressing/stuffing evenly in the dish.

Mix turkey, vegetables and mayonnaise together in a bowl until well combined; spread in an even layer over dressing/stuffing.

Mix mashed potatoes and half the cheese together.

Spread potatoes over top the turkey mixture. Top with the remaining cheese and season with paprika.

Bake in preheated oven until heated through, 30 to 40 minutes.
Tip:Â If you have leftover cranberry sauce, you can use that as the base layer in the casserole before adding the dressing or stuffing, or you can drizzle it over the top of your plated meal.
